Tasty Pork Stew

Ingredients

1 tbsp olive oil

2 brown onions, chopped

500g lean pork, diced

2 teaspoons sweet paprika

1 tsp hot paprika

1/2 tsp dried thyme

2 tbsp tomato paste

1/4 cup red lentils

1 12 cups beef or vegetable stock

Greek yoghurt and 2 tablespoons of chopped parsley to serve

Fresh ground black pepper

Method

Heat olive oil in a casserole pot over high heat.  Add the onion, pork sweet and hot paprika and cook, stirring for 3 – 4 minutes or until browned.  Add the thyme, tomato paste, lentils, stock and black pepper to taste.  Bring to the boil, then reduce heat to very low and cook, covered for 20 minutes, stirring occasionally.  Uncover and cook for another 15 – 20 minutes or until thickened.  Serve with a generous dollop of Greek yoghurt and a sprinkle of parsley.
